What’s in Season For April?

April showers bring May flowers, as well as some amazing fruits and vegetables! 

Many don’t realize the amount of food that can be saved while preparing food. A lemon peel here, a radish top there, it adds up! These scraps leftover from your meals can be transformed into a delicious side, topping, or meal of its own with just a little creativity.

The month of April has some interesting in-season produce, all paired with delicious and unique recipes! Lemons, radishes, pink lady apples, and asparagus are the lovely fruits and vegetables we’ve chosen to highlight this month. As we slowly emerge from our slump, hibernating during the winter months and getting ready for summer, here are our takes of refreshing and delicious zero waste recipes. We hope you enjoy the recipes we curated, let us know what you think on any of our social media pages!

Why is it delicious?
This recipe can be eaten in a variety of ways, including on top of your yogurt, toast, or french toast, mixed into cocktails, and even as a dipping sauce! If a recipe calls for the juice or zest of a lemon, save the lemon peel to make this delicious lemon marmalade! The peel can be kept in the freezer until you have enough for this recipe!

In this recipe, we use the tops of the radish to make the pesto! Now, the leafy greens that normally get tossed or composted get to be the spotlight of the dish!

This recipe uses almost all of the apple, the only thing left is the core, which can be used to make homemade Apple Cider Vinegar! If you are trying to reduce your use of one-time use products, the parchment paper can be replaced with a silicone baking sheet!
